Sunday Funday!

This is such a clever idea, instead of using a calendar buy a frame from walmart/target that has 8 openings. Inside the frames put some kind of pattern (you could use scrap booking paper, or old fabric you have laying around). Then each week write out your schedule on the glass using a dry erase marker! SO cute and so easy! Plus you can have you kids help you write out their weeks!

Oatmeal Raisin Muffins! YUM

I am on a total oatmeal raisin kick right now, since Safeway had low calorie healthy oatmeal raisin cookies on sale. These muffins look SO DELICIOUS, and I'm sure you could substitute to make even LOWER calories. If you do substitute certain ingredients I would love for you to comments with your take on the recipe.




Total time: 50 minutes
Prep: 20 minutes
Bake: 20 minutes

Cool: 10 minutes

Ingredients
1 cup reduced fat milk
1 cup quick cooking oats
1 large egg
1/4 cup unsalted butter, melted and slightly cooled
1/4 cup pure maple syrup
1 cup whole-wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup raisins
Topping:
1 tablespoon sugar
1/4 teaspoon ground cinnamon

Directions
1. Preheat oven to 350 degrees F. Spray 12 muffin cups with nonstick spray.

2. In a small bowl, combine milk and oats. Let soak for 15 minutes.

3. Beat together egg, maple syrup and butter. Stir into oatmeal mixture.

4. In a separate bowl, whisk together flour, baking powder and salt. Stir in the raisins.

5. Stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups. Sprinkle with cinnamon sugar.

6. Bake 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool 5 minutes in pan until easier to handle, then transfer to a wire rack and allow to cool 5 more minutes. Serve warm.

"Slumber Parties"

So last night I hosted a "Girls Night In", my friend who is a slumber parties consultant came over and showed us what the company is all about. I was a little apprehensive at first but it was a night full of laughing, tasting, touching and spending money.

Slumber Parties are parties for females 18+ who are looking for things to spice up their love life. It is very professional and does not make you feel weird at all. You won't hear any "dirty" words at these parties, they refer to everything by different names (doorbell, mountains, his boys) so on and so forth. It's a fun time to be had. Some of the stuff I had never heard of and the names are the best, the favorite name last night was of a book called "tickle his pickle". I plan on hosting another party for my friend because I just had so much fun.

I will also look into becoming a consultant because it seems like a fun company to work for lots of opportunities! So if you are looking for a discreet place to buy new products for your love life I would highly suggest checking out slumber parties, they have lifetime warranties on some of their products! I am Back!

So it's been a long hectic week and I am so so so happy tomorrow is Friday! I will be doing a pamper party girls night with Scentsy, It Works and Slumber Party products! I love hosting these events to help my friends (and myself) bring in extra income!

Our local party city opened up a liquidation center and had EVERYTHING marked down to $1, so we got most of the birthday supplies for both my mom's 50th and my son's 1st for a GREAT deal. Plus I'm making a lot of the supplies on my own thanks to pinterest!

On a healthier note, I am attempting to lose 10 more pounds by our San Diego trip next month, plus I have 40 more pounds to go to hit my goal weight and a total of 120 pounds lost! 80 pounds so far, I hit a plateau and got super discouraged but sought the guidance of a friend of mine who was in the same position as I was after she had her daughter and she steered me in the right direction. I am now eating 5 small meals a day to equal about 1100-1200 calories. I am using PROFIT (https://wrapyourwaytothin.myitworks.com/Shop/Product/933) protein shakes to supplement one meal a day and I LOVE LOVE LOVE them! I mix mine with either almond milk or water and they are delicious both ways. I bought a blender bottle:
 on Amazon, they run about $5-$10 depending on the size you get but they are AMAZING perfect for your protein shakes, or morning smoothie/juice blends.

My friend also recommended I try the Jillian Michaels Yoga Meltdown. Now I am a huge fan of The Biggest Loser and of Jillian Michaels who dealt with her own weight loss struggles, however I also know she is a fast past trainer and well I'm not in the best shape. However when I saw Yoga I was thinking this will be a great routine to ease into.... It's a great routine but it's not your typical yoga, it's a fast paced repetition based yoga. You will sweat and you will get your heart rate going, you will also feel the burn the next day. If you are new to Yoga or working out in general, they do have a beginner model showing you modified versions of the poses. It's a great workout though, it has 2 different levels and I would definitely recommend it!

loss...

On Wednesday my mom called me to let me know that my great uncle had Alzheimer's  and wasn't doing good. It was upsetting but we figured we would still have a few more months with him which was good news. My mom spoke with him the next day and he knew who she was and told him she could come visit, seemed to be in good spirits. That gave us more hope, we still have time he knows what's going on. My mom was going to go visit him in a few days.

This morning Mom mom called me, we'd only been up a few minutes, I was trying to change the baby and wake up. My mom let me know that my uncle had been put on hospice and  that he wasn't doing good. Such a fast turn, quite confusing. At this point, I just wanted to speak to my grandma that was her twin brother and only sibling. I called her and she was crying, at that point I lost it, I just felt so bad for her because I knew how much she was hurting. Then, I picked up the phone and called my Uncle who I haven't spoken too in 8 years, after he told me "i would amount to nothing"... I just wanted him to make sure he got ahold of my grandma because him and my grandma's brother both have the same first name and all my other uncle's knew and had talked to my grandpa. I let my Uncle know to call my grandma and then hung up the phone, I didn't even recognize the man on the other line, but I couldn't think about it. We went out for breakfast after that...

My mom called during breakfast and stated that her cousin said they could come see my great uncle and she could bring my uncle but that they needed to come fast. A few hours later my mom called back and told me he just looked like he was sleeping and it was peaceful. My mom then let me know she was going to go get my grandma so she could come up and see her brother. Then, about 2 hours later my mom called me and let me know that my  great uncle had passed. How did this happen? So fast? I called my Uncle and let him know as well as my cousin. Now my mom is still traveling down to be with her mom.

So today we will be mourning the loss of my Great Uncle. A graduate of UofA, a world traveler, a man who lived his life to the fullest. I am so happy he got to meet Lennon and I'm so happy to have had him in my life for as much time as I have.

My posts may be limited this week, but I will do what I can.

Happy Saturday

Is it really the weekend again? Time goes by so fast! Last night we had a nice family dinner out and I surprised my wonderful other half with tickets to go see Rush, I gave them to him as a "I'm proud of all the amazing things you've been doing lately". I think it's important to show gratitude in your relationship often, it doesn't have to be a present but maybe a card or a letter, a nice surprise breakfast in bed... anything really just to make them know you appreciate them.

We then went shopping for party favors for our son's first birthday! We also got him an adorable outfit for the pictures we are going to take to send with his invitations. I guess one of the pro's about having a significant other who is a photographer is you can get pictures whenever you want and know they will turn out amazing!

Today we are getting a new couch! Right now we have one from my M.I.L that is covered by a black couch cover and a red one that our cat destroyed the side of. My uncle is moving out of his apartment and had essentially brand new couches that he needed to get rid of so he gave them to us, I love having such an amazing family! Anyone have tips on keeping your pets from destroying your furniture? My cat is a brat, our other cat is blind and a sweetheart and our dog pretty much keeps to himself lately. He's never chewed on the furniture though.

Happy Hump Day Dinner

Well I couldn't decide what was for dinner tonight I thought about it all day, trying to decide what sounded good. SO I decided on skinny quesadilla burgers. My boyfriend loved them!

Ingredients:
1lb lean ground beef
Jalapenos
Low Carb Tortillas
Cheese (if you want)
Spices to taste (we used red pepper flakes, garlic powder and pepper)


 
Combine the ground beef, jalapenos and spices in a bowl, use your hands to mash it all together:
We used a flat top skillet but you can also use a pan/george foreman
 I made two larger patties for my boyfriend, before you put the tortilla on the pan try to wipe off any excess grease that has cooked off, I just blot with a paper towel. Cook tortilla on both sides (you can also add cheese at this time if you want it to melt)

 You can use ketchup, or hot sauce... I prefer hot sauce the other half prefers ketchup.

I served the burger with the brown rice we made with out skinny enchiladas the other day, this is a picture of my boyfriends plate. On mine I ripped off the excess tortilla and left off the cheese! BUT, it was pretty good and super filling meal!
